So I decided to make a very simple no-bake, strawberry lemon lime Cheesecake that is actually good for you as it's free from gluten, dairy, eggs, soy and sugar!
Here are the ingredients
Crust:1 1/2 cups almonds2 Tbs coconut oilPinch of saltDash of pure stevia powder, Erythritol or sugar substituteCheesecake Filling:3 cups blanched almonds2 cup raw cashews or more almondsCanned coconut milk1/4 tsp pure stevia powder to taste (see notes for sub)17 Tbs coconut oil1 Tbs vanilla extractPinch of salt
Lime Layer:1/3 cup lime juice2 Tbs lime zest2 large handfuls fresh spinach
Lemon Layer:1/3 cup lemon juice2 Tbs lemon zest1/8 to 1/4 tsp turmeric optional - for color
Strawberry Layer: About 9 Strawberries1/3 cup lemon juice
